Vegan Breakfast Casserole

Spray 9x13 dish.  Preheat oven to 350°

 

Mash in a bowl:

1 package firm tofu (less than 15oz), rinsed, drained

½ tsp salt

½ tsp turmeric

1 tsp poultry seasoning (or chicken-like seasoning)

 

Then stir in:

3-4 cups unsweetened soymilk

4 slices bread, diced

12 oat sausage patties, diced (see oat sausage recipe)

 

Stir.  Pour in 9x13.  Bake for 30 minutes.
