Quickie Berry Pie

Makes 1 full 9” pie


Have ready:

1 pre-baked pie crust OR 1 granola pie crust

 

In a saucepan combine the following and put it on to boil:

4 c. fresh or frozen (unsweetened) blueberries

1½ c. water

1½ t. vanilla

3 T. sugar or honey

¼ t. salt

 

Meanwhile, in a separate container combine the following, mixing until the cornstarch is dissolved:

½ c. water

¼ c. cornstarch

 

When fruit is boiling, pour in the cornstarch water and stir constantly until it thickens.  Remove from heat and pour immediately into pie shell.  CHILL thoroughly.  (You can use any fresh or frozen fruit or barriers or combinations).
