Banana Nut Muffins

3 cups whole white wheat flour

¼ cup raw sugar

¼ cup golden flax meal

1 Tbsp aluminum free baking powder

½ tsp salt

½ tsp nutmeg

1 cup soymilk

½ Tbsp lemon juice

2 cups mashed over ripe bananas (about 4 large)

1/3 cup light olive oil

1 tsp vanilla

½ cup chopped walnuts (optional)

 

Directions:

Preheat oven at 400.  Spray muffin tins (I use regular size and 1 baby size).  Mix dry ingredients.  Mix liquids.  Stir together thoroughly.  Place appropriate amount in muffin tin cups (2/3 full).  Bake 18-20 minutes.  Cool in tins 5 minutes, then transfer to cooling rack for 5 minutes.
