Cheesy Sausage Zucchini Casserole

1 package of sausage (I have used links or ground)

1 can of mushrooms, or sliced fresh mushrooms

1 medium zucchini, cubed

1 can of diced tomatoes (I use Rotel tomatoes for a little spice.)

¼ cup chopped onion

1-1½ cups of uncooked pasta

Shredded cheese

Italian seasoning

Salt and Pepper

 

Directions:

Cook pasta.  Cook sausage and onion in a large skillet, cooking until browned.  Drain excess grease.  Stir in zucchini and tomatoes and cook until tender. 

 

In a greased 9x13 pan, mix sausage, zucchini, and other vegetables.  Add shredded cheese and spices to taste.  Bake uncovered for 40 minutes at 325 or until browned on top.
