Potato Candy

1 medium potato

1 lb. Powdered sugar

dash of salt

Peanut Butter

1 tsp vanilla

 

Boil potato then mash until it is smooth adding only salt and vanilla to potato.  Add powdered sugar until the mixture is stiff enough to roll.  On a powdered sugar surface, roll the mixture until it is about ¼ inch thick.  You may have to divide the mixture in half to do this.  Spread the surface with peanut butter.  Roll it up like a jellyroll.  You can chill it if you desire.  Then cut the roll in slices.  If I have leftover mashed potatoes, I use that to make the candy.
