Crab Cakes

2 cups grated zucchini (with skin on)

1 egg

1 cup breadcrumbs

1 Tbsp mayo

1 tsp Old Bay Seasoning

 

Directions:

Mix all ingredients together. 

Form into patties.

 

Fry in a small amount of oil until brown.

 

** May be served with red hot sauce or catsup for dipping.  I have used Ranch dip or dressing.

 

Yield 6-8 cakes
