Hope's Current Bread Dough

6 cups hot/warm tap water

1/3 cup light olive oil

1/3 cup honey

2 Tbsp salt

6 cups whole white wheat flour (wheat Montana bakes really well)

3 Tbsp instant yeast

1/3 cup vital wheat gluten flour

2/3 cup soy flour

1 1/3 cup (ground) golden flax meal

6-7 cups more whole white wheat flour

 

Mix first 4 ingredients to dissolve.


Mix in 6 cups flour thoroughly.


Mix in yeast.  Add next 3 ingredients thoroughly.  Add rest of flour until just stiff enough to knead.  


Knead ~ 10 minutes. 


Shape options:


1 Portion = 1 loaf

Shape and place in sprayed loaf pan.  Raise in just warm (lowest setting) oven about 20 minutes (not full size, but almost).  Bake @ 350 for 35-40 min. *


1 Portion = 32 Dinner Rolls

Shape and place on sprayed cookie sheet.  Raise in warm oven. Bake @ 400 ~ 10 minutes or 350 ~ 15 minutes. *


1 Portion = 12 Burger Buns

Shape and place on sprayed cookie sheet.  Raise in warm oven. Bake @ 400 ~ 12 minutes or 350 ~ 17 minutes. *


1 Portion = 16 Smartdog Buns

Shape and place on sprayed cookie sheet.  Raise in warm oven. Bake @ 400 ~ 10 minutes or 350 ~ 15 minutes. *


1 Portion = 15 sweet rolls

Roll out, add filling, roll up, slice, place in 9x13 and raise.  Bake @ 350 for 25-30 minutes.


½ Portion = 1 Pizza Crust

Roll out on sprayed cookie sheet.  Raise and prebake @ 400 ~ 12 minutes or add toppings, after rolled out, then let rest 10-15 minutes, bake @ 400 for 20-25 minutes.

 

*cool on cooling rack, slice as desired when cool.
