Turkey, Rice and Broccoli Casserole

4 cups chopped roasted turkey (1 1/2 # browned and drained hamburger or sausage could be used as well)

 

1 small onion chopped

1 stick butter

2 envelopes Lipton Chicken Noodle Soup mix (comes 2 in a box)

1 cup rice (regular rice not minute rice)

1 10 to16 oz pkg. of broccoli

 

In a skillet melt butter and sauté onion. Set aside.

 

In a saucepan 4 cups boiling water add 2 envelope of Lipton's Chicken Noodle soup mix and 1 cup of rice. Cook until tender and water is absorbed.

 

Cook broccoli and drain (I don't always cook it, but have it thawed.)

 

In a large bowl mix turkey, onion & butter, rice mixture and broccoli together. Pour into a 9 X 13 casserole or 4 qt bowl cover with foil and bake it for 30-45 minutes at 350°.

 

Chopped mushrooms can be added.

 

This is a great way to use, up left over turkey or chicken. Great for covered dish dinners!
