Pecan Pie Bars

Ingredients:

Crust:

2 c. flour

1/3 c. white sugar

¼ tsp. salt

2/3 c. butter

Filling:

3 eggs

1 c. corn syrup

½ c. brown sugar

½ cup white sugar

2 Tbsp melted butter

1 tsp. vanilla extract

1 2/3 c. pecans

 

Directions:

Preheat oven to 350F.  Generously grease 9x13 pan.


In a large bowl, stir together 2 c. flour, 1/3 c. white sugar, and salt.  Cut in 2/3 c. butter until mixture resembles coarse crumbs (I use a stand mixer for this).  Press mixture firmly into prepared pan.


Bake crust for 20 minutes.


While the crust is baking, prepare the filling.  In a large bowl, beat together eggs, corn syrup, ½ c. brown sugar, ½ white sugar, melted butter, and vanilla. Gently stir in pecans.  Spread the filling evenly over the crust as soon as it comes out of the oven.


Return pan to oven and bake for 25 minutes or until set.  Allow to cool on wire rack before cutting into bars.
