Oven Beef Stew

2 pounds of stewing beef – cut in cubes

3-4 medium potatoes – pared and quartered

6 to 8 medium carrots – pared and cut

½ cup celery

1 medium onion chopped

3 Tablespoons tapioca (quick cooking)

1 pound can tomatoes – cut up

1 Tablespoon  parsley

2 ½ teaspoons salt – ¼ teaspoon pepper

1 bay leaf

1 cup beef broth or 1 cup water & 1 bouillon cube

 

Brown beef cubes – add remaining ingredients – place in large casserole

 

Cover and bake in 350º oven for 2 hours

 

Remove bay leaf

 

Note: I always buy packaged stew meat which is already cubed.
