Quinoa Salad

3 cups quinoa (okay to add extra)

2 tsp granulated onion powder

1 tsp. dried basil

½ tsp dried oregano

2-3 cloves garlic, crushed

1 – 16oz can olives, cut in half, lengthwise

1 bunch green onions, sliced (about 8)

1 small head Romaine, chopped

1 small cucumber, diced

1-pint cherry/grape tomatoes, halved (~30)

2 radishes, minced (optional)

 

Directions:

Stir first four ingredients.  Add next two ingredients.  If cool, add vegetables.  Drizzle on 1 Recipe of Vegan Creamy Italian Dressing (see page 116).  Stir and serve.
