Chocolate Truffles

1-12 oz. package chocolate chips

1/3 c. whipping cream

½ tsp. vanilla

12 oz. chocolate flavored candy coating

 

Line baking sheet with waxed paper; set aside.  In a medium heavy saucepan, combine chocolate chips and whipping cream.  Cook and stir constantly over low heat until chocolate melts.  Remove saucepan from heat and cool slightly.  Stir in vanilla.  Beat truffle mixture with an electric mixer on low speed until smooth.  Drop truffle mixture by teaspoons onto prepared baking sheets.  Chill in freezer about 20-30 min. until firm.

 

Shape chilled truffle mixture into balls; place back on waxed paper and freeze approx. 30 min.  Melt candy coating in heavy saucepan, stirring constantly until smooth.  Using a fork, dip truffles into coating.  Return to baking sheet lined with waxed paper.  Let stand until chocolate coating is set.

 

Truffles can also be rolled in almonds, hazelnuts, etc. or drizzled with white chocolate.
