Red Lentil Soup

Sauté until soft:

·  1-2 onions, diced

·  1 grated carrot

·  2-3 cloves garlic, pressed or minced

·  1 Tbsp olive oil

·  2 Tbsp water

Add and continue to sauté:

·  1 small tomato, diced

·  1 tsp turmeric

·  1 tsp coriander

·  1 tsp cumin

·  1½ tsp salt (optimal to use less)

Stir in:

·  2 cups red lentils, rinsed

·  6-8 cups water (may add more as desired)

 

Cook about ½ hour, until lentils are done.  Add 2-4 Tbsp lemon juice (optional) for added zest.  Serve and enjoy!
