Zucchini Crisp

8 cups cubed peeled zucchini                    

Topping:

¾ cup lemon juice                           

1 1/3 cup packed brown sugar

½ - ¾ sugar                                      

1 cup old-fashioned oats

2 teaspoon cinnamon                                 

1 cup all purpose flour

1 teaspoon nutmeg                           

2/3 cup cold butter or margarine

 

In bowl, combine zucchini, lemon juice, sugar, cinnamon and nutmeg and mix well.  Pour into greased 13 X 9 baking dish.

 

For topping, combine brown sugar, oats and flour in a bowl; cut in butter until crumbly.  Sprinkle over the zucchini mixture.  Bake at 375 degrees

For 45-50 minutes or until bubbly and the zucchini is tender.  (Tastes like apple crisp)
