Enchiladas

6 flour tortillas

1 small can Fat-Free or Vegetarian Refried Beans (traditional refried beans have lard in them)

1 small can red enchilada sauce

cheddar flavored soy cheese

green onions

 

Soften tortillas in microwave for a few seconds, and then fill with refried beans.  Roll them up and place them in a sprayed 9" x 9" pan.  Pour the enchilada sauce over all (covering every bit).  Sprinkle soy cheese and green onions on (if you want).  Bake at 425 degrees for about 20 minutes or so (until cheese melted, sauce bubbly, and enchiladas just starting to brown/crisp).  They are good served with lettuce & tomato, chips & salsa and/or guacamole.
