Pappy's Shortcake for Strawberries

4 cups all-purpose flour

1 tsp salt

¼ cup sugar

2 Tbsp baking powder

1 cup butter, cold

2 beaten eggs

1 1/3 cup light cream or half and half

 

Directions:

Mix dry ingredients together. Cut in the butter to form coarse crumbles (do not over mix). Combine eggs and cream in separate bowl and then stir into dry mix. Spread into 2 greased 8-inch rounds or a greased 13 x 9 pan, build up the edges. Bake at 450 for about 15 minutes. Cool 5 minutes before cutting. Can slice into layers and pour strawberries and sugar mix over it or eat plain. Best served warm.
