Shortbread

5 1/2 cups of flour (680 grams)

1 cup of sugar (230 grams)

1 cup of softened butter (454 grams)

 

Mix ingredients together until they are thoroughly combined but not overworked.


I like to press it into a baking pan like a 9 x 13 inch pan or smaller ones as needed.  I have also used a cutter to make 1" round bites.  One can also use molds for this purpose if they are available.  The dough should be pressed or rolled to 1/2 to 3/4 inch thick.

 

Bake 25 or 30 minutes at 375° do not let them brown then immediately sprinkle with sugar.  Cool in the pan or on a rack if you can easily do so.


Store in an airtight container at room temperature or freeze for a future event.
