Gluten Roast

Makes 5”x 9” loaf / 8 servings

 

1 c. Vital Gluten

1 c. Water

1 Medium Onion, Chopped

1 c. Walnuts

½ c. Soymilk

½ c. Bread Crumbs

½ t. Salt

2 c. Hot Water

1 T. Vegex (paste from yeast extract, used for flavoring – can leave out)

1 t. Oil

4 Whole Bay Leaves

 

Mix 1 c. water and gluten.  Grind gluten, walnuts, and onions.  First mix 2 c. hot water and vegex together, then add all ingredients, except bay leaves, to first mixture.  Pour into Pam sprayed 5”x 9” loaf pan.  Place Bay leaves on top of loaf.  Bake at 350° F for 1 hour or until well set.  (Remove bay leaves before eating.)
