Simple Whole Wheat Bread

Makes 2 loaves

 

3 c. Warm Water

2 T. Active Dry Yeast

¼ c. Honey

2 t. Salt

¼ c. Gluten Flour

4 c. Whole Wheat Flour

3½-4 c. Unbleached White Flour

 

Dissolve yeast in water.  Mix in 3 cups whole wheat flour and let rise for 15 minutes.  Add honey and salt.  Stir.  Then add 1 cup flour at a time and mix after each one (start with gluten flour).  Knead the dough until it is firm (not dry).  Shape in 2 loaves and put in sprayed bread pans.  Let it rise until it doubles its size.  Bake at 350° for about 45 minutes.  (You can cover with foil part way through to keep it from getting too dark.)  Spray top of bread with no-stick after taking it out of the oven. 


(This recipe works in bread machine; I do half recipe/one loaf on the 1½ pound setting).
